Oatmeal White Chocolate Chip Strawberry Cookies. This original Cooking Light recipe has been an insane favorite after I made a few strategic modifications. Skip the white chocolate & strawberries and substitute semisweet chocolate chips & cranberries and double the recipe amounts for these ingredients! One can never be too rich, too thin, or have too many chips in a cookie!
I cook batches and freeze them so there’s always a cookie handy but not so handy that they’re right in my face and you scarf down a few too many. I also love frozen cookies as I’m all about the crunch. You can convince yourself you are eating something healthy when you dive into these chunky treats– oatmeal, dried fruit, less butter & sugar– but feeling virtuous has absolutely nothing to do with it.
Every time I bake these for friends, I am asked for the recipe. I’ve also made it with other variations like orange-flavored cranberries or dried cherries or swapping orange extract for vanilla. But always chocolate chips and the more the merrier. Bake. Eat. Smile. Repeat.
